Prepare ingredients

Separate 4 large egg whites (discard or reserve yolks for another use). Measure milk or water, shred jack cheese, slice mushrooms, thinly slice scallion, mince garlic, and rinse spinach. Toast bread or English muffin and set aside warm.

Whisk together egg whites, milk (or water), and kosher salt and black pepper in a small bowl until lightly frothy.

Cook Vegetables

Heat a nonstick skillet over medium heat. Add 1 tablespoon olive oil or butter and swirl to coat. If using, spray a little cooking spray for extra nonstick security.

Add sliced mushrooms and a pinch of salt. Sauté 3–4 minutes, stirring occasionally, until mushrooms release liquid and begin to brown.

Add minced garlic and sliced scallion; cook 30–45 seconds until fragrant.

Add the packed spinach a handful at a time, stirring until wilted. This should take about 1–2 minutes. If using, squeeze 1/2 teaspoon lemon juice over the spinach to brighten flavor. Transfer the wilted spinach and mushrooms to a plate and keep warm.

Cook Egg White Omelet

Reduce heat to medium-low and wipe the skillet clean if necessary; add a light film of oil or butter to the pan so egg whites won't stick.

Pour the whisked egg whites into the skillet, tilting the pan to spread them evenly into a roughly 6–7 inch circle (size will vary depending on pan). Let the whites set undisturbed for about 1–2 minutes until the edges begin to firm.

Using a silicone spatula, gently pull the edges toward the center and tilt the pan to allow any uncooked egg to flow to the edges. Continue until the top surface is mostly set but still slightly glossy — about 1–2 more minutes.

Evenly distribute the cooked spinach and mushrooms over one half of the omelet. Sprinkle shredded jack cheese over the vegetables (reserve a tablespoon for garnish if desired).

If you prefer a folded omelet, gently fold the empty half over the filling using the spatula and press lightly for 10–15 seconds to help the cheese melt. For an open-faced presentation, do not fold.

Cover the skillet with a lid for 30–60 seconds to ensure cheese melts and egg finishes cooking without browning. If you like the top a little more set, a brief 15–30 second broil in a preheated oven-safe skillet may be used (watch closely).

Finish & Serve

Slide the omelet gently onto the toasted bread or English muffin half, keeping it open-faced if desired. Sprinkle reserved cheese (if any), chopped parsley or chives, and a pinch of red pepper flakes if using.

Season to taste with additional salt and pepper. Serve immediately while hot.
