Combine base ingredients
Add 2 oz London dry gin, 0.75 oz St-Germain elderflower liqueur, 0.75 oz fresh lemon juice, and 0.25 oz simple syrup into a cocktail shaker.
Add ice and shake
Fill the shaker with large ice and shake vigorously for 10–12 seconds until the shaker is well chilled (the outside should become frosty).
Double-strain
Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled coupe or Nick & Nora glass using a fine strainer to remove small ice chips and lemon pulp.
Top with sparkling
Carefully top the cocktail with 2.5 oz cold sparkling wine. Pour slowly down the side of the glass so the drink gently effervesces and does not overflow.
