Check the bottle for a clean label and cork condition. If the bottle has been stored lying down, stand it upright for 24 hours before serving if possible to allow sediments to settle toward the bottom.

Inspect and prepare bottle

Chill the Malbec to its ideal serving temperature: 60–65°F (15–18°C). If the wine is too warm, place the bottle in the refrigerator for 20–30 minutes; if too cold, remove it and let it sit at room temperature for 10–20 minutes.

Temperature

Use a waiter’s corkscrew or wine opener. Slice the foil beneath the lower lip, remove the capsule, insert the corkscrew into the cork straight, and pull the cork out gently to avoid agitation that might bring up sediment.

Open the bottle

If the wine is young and tannic or if you want to aerate it, decant into a room-temperature decanter for 20–40 minutes before serving. For older bottles, decant carefully to separate any sediment; stand the bottle in a light and pour slowly, stopping when you see sediment approaching the neck.

Decanting (optional)

Pour 3–5 ounces (90–150 ml) per glass. Hold the bottle by the base, pour steadily, and twist the bottle slightly at the end of each pour to minimize drips.

Serve with simple, complementary foods: grilled red meats, roasted vegetables, aged cheeses, or charcuterie. Malbec from Mendoza typically shows ripe black fruit (blackberry, plum), cocoa or chocolate notes, and round tannins. Encourage guests to swirl, sniff, and take small sips to appreciate the wine's body and flavor.

Provide small glasses or a carafe of water for cleansing between sips and courses.

Palate cleansing and water

Reseal the bottle with its cork or a reusable wine stopper and store upright in a cool, dark place or in the refrigerator. Consume within 3–5 days for best quality; the exact time depends on the wine’s structure and exposure to oxygen.

Storage of unfinished bottle

Arrange a cheese board with a selection of aged cheddar, Manchego, or hard cow's milk cheeses; include cured meats like salami or prosciutto, crusty bread or crackers, and some dried fruits or nuts to complement the Malbec's fruit-forward profile.

Set out clean red wine glasses (preferably large-bowled) and allow guests to swirl and aerate their own pours as desired.
