Season

Pat the flat iron steak dry with paper towels. Rub both sides with kosher salt, black pepper, ground cumin and garlic powder. Let rest at room temperature for 15 minutes while you prepare other components.

Cook steak

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 3–5 minutes). Add 2 tbs vegetable oil and swirl. Sear the steak 3–4 minutes per side for medium-rare (internal temperature ~130–135°F / 54–57°C). Adjust time for desired doneness. If the steak is very thick, finish in a 400°F (200°C) oven for 3–6 minutes.

Rest & slice

Transfer steak to a cutting board and tent loosely with foil. Rest 8–10 minutes. Slice thinly across the grain into 1/4-inch slices and keep warm.

Salsa Ranchera

Roast tomatoes and chiles

While the steak rests (or beforehand), place tomatoes and chile on a hot dry skillet or comal over medium-high heat. Cook, turning occasionally, until the skins are blackened/blistered and softened, about 8–10 minutes. Char the onion halves cut-side down for 4–6 minutes and char the garlic cloves briefly until fragrant (watch carefully so they don’t burn).

Blend

Transfer the hot tomatoes, charred onion, garlic and chile to a blender or food processor. Add 1 tbs vegetable oil, 1 tsp kosher salt and 1/2 tsp black pepper. Pulse to a slightly chunky salsa (or smooth if you prefer). Taste and add lime juice and chopped cilantro. Adjust salt if needed.

Warm salsa

Pour the salsa into a small saucepan and simmer gently for 3–5 minutes to meld flavors. Keep warm on very low heat until plating.

Eggs & Tortillas

Fry tortillas

Heat a large skillet over medium heat and add 2 tbs butter or oil. When hot, fry each corn tortilla 30–45 seconds per side until pliable and slightly crisp at edges. Transfer to a plate and keep warm, stacking them and covering loosely with foil to prevent drying.

Sunny-side up eggs

In a nonstick skillet, heat 1 tbs vegetable oil over medium-low heat until shimmering. Crack eggs into the pan, spaced so they don’t touch. Cook gently until whites are set but yolks remain runny, about 3–4 minutes. If you prefer whites fully set on top, cover pan briefly for 30–45 seconds. Season eggs with a pinch of salt and pepper.

Assembly & Garnish

To assemble huevos rancheros, place one warm fried tortilla on each plate. Spoon a generous 2–3 tbs of warm salsa ranchera onto each tortilla, spreading slightly so it covers the center.

Arrange 3–4 slices of the sliced flat iron steak on top of the salsa (adjust steak per plate as desired).

Top each steak-covered tortilla with a sunny-side up egg.

Sprinkle crumbled queso fresco over the eggs and steak, add sliced avocado and extra cilantro leaves. Serve with lime wedges and optional hot sauce on the side.

Serve immediately so the tortillas remain slightly crisp and eggs yolks are runny for dipping. Leftover steak can be refrigerated and reheated gently.
