Method
Waffle Batter
Preheat and prepare
Preheat your waffle iron according to manufacturer's instructions to medium-high heat. If your iron has temperature settings, aim for a setting that produces a golden exterior. Lightly brush or spray the plates with vegetable oil if your iron is not nonstick.
Combine dry ingredients
In a large bowl whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1 teaspoon salt until evenly combined.
Mix wet ingredients
In a separate bowl, beat 2 large eggs lightly, then whisk in 1 1/2 cups whole milk, 4 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract until homogeneous.
Make the batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. It's okay if there are a few small lumps—do not overmix. Let the batter rest 5 minutes; this hydrates the flour and helps create a tender interior.
Cooking Waffles
Measure batter and cook: Spoon or pour batter (about 1/2 to 3/4 cup depending on your waffle iron size) onto the preheated waffle iron. Close the lid and cook until the waffle is deep golden brown and crisp, usually 3–5 minutes. Avoid opening too early so steam can escape and the waffle crisps.
Remove and keep warm: Carefully remove waffle and transfer to a wire rack set over a baking sheet in a 200°F (95°C) oven to keep warm and crisp while you cook remaining waffles. If you plan to stack waffles directly, alternate layers with parchment paper to avoid sogginess.
Chicken Littles (if adding)
Prepare Chicken Littles: If using pre-made or frozen Chicken Littles, reheat according to package instructions (usually bake or air-fry until internal temperature reaches 165°F / 74°C and exterior is hot and crisp). If making small fried chicken patties from scratch, ensure they are fully cooked and crisp before assembly.
Assemble on waffles: For each serving, place 1–2 Chicken Littles on top of a freshly cooked waffle (depending on size; recipe notes the +6 add-on meaning up to 6 total littles for a group). For a classic sweet-savory combination, place the chicken on the waffle, dot with a little melted butter if desired, and drizzle with maple syrup.
Finishing & Serving
Drizzle with Grade A maple syrup: Serve each waffle with about 2 tablespoons (or to taste) Grade A maple syrup. For the recipe yield given, have approximately 1/2 cup maple syrup available for 4 servings.
Serve warm: Plate waffles immediately while hot. If serving Chicken Littles, arrange them on top or on the side and serve additional syrup as desired.
