Heat water
Bring 12 fl oz (about 350 ml) of fresh, cold water to a near-boil. For Earl Grey, heat water to 200–212°F (93–100°C). If you don’t have a thermometer, bring to a rolling boil.
Steep
Pour the hot water over the tea. Steep for 3–5 minutes depending on desired strength: 3 minutes for lighter, floral cup; 4 minutes for balanced; 5 minutes for stronger, brisk flavor. Avoid steeping much longer to prevent bitterness.
Remove leaves
Remove the tea infuser or tea bag promptly at the end of steeping. If loose leaves were used without an infuser, pour the tea through a fine strainer into a cup.
