Burger Preparation

Prepare the Chicken Patties

In a mixing bowl, combine ground chicken with salt, pepper, and any preferred spices. Form into 4 equally sized patties.

Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and set aside on paper towels to drain.

Grill the Chicken Patties

In the same skillet or on a grill, cook the chicken patties for about 5-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

Add Cheese

In the last minute of cooking, place a slice of pepper jack cheese on each patty and cover to melt.

Grill Pineapple

Slice the fresh pineapple and grill for 2-3 minutes on each side until caramelized.

Prepare Spicy Aioli

In a small bowl, mix mayonnaise with sriracha or your preferred hot sauce to taste, creating a spicy aioli.

Assemble the Burger

Spread spicy aioli on the bottom half of each bun. Layer with the chicken patty, bacon, grilled pineapple, sliced jalapeños, and red onion. Top with the other half of the bun.
