Grilled Lemon Herb Chicken

Prepare the Marinade

In a bowl, mix together olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper.

Marinate the Chicken

Place the chicken pieces in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Grill the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Baked Ziti

Cook the Pasta

In a large pot, bring salted water to a boil. Add the ziti pasta and cook according to package instructions until al dente. Drain the pasta and set aside.

Prepare the Cheese Mixture

In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella cheese, grated Parmesan cheese, chopped fresh basil, and a pinch of salt and pepper. Mix well.

Assemble the Baked Ziti

In a large baking tray, spread a thin layer of marinara sauce at the bottom. Layer half of the cooked ziti on top of the sauce, then spread half of the cheese mixture over the pasta. Repeat the layers with the remaining ziti, marinara sauce, and cheese mixture.

Top with Cheese

Finish by topping the assembled ziti with the remaining shredded mozzarella cheese.

Bake

Preheat the oven to 375°F (190°C). Cover the baking tray with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
