Prep
Chill and measure
Chill a highball or Collins glass if possible. Measure and chill grape juice and ginger ale. Juice a fresh lime and measure 1/2 oz (about 1 tablespoon). If using simple syrup or agave, have 1/2 tsp ready.
Build the Mocktail
Add ice
Fill the chilled glass with cubed ice to the top (about 1 cup).
Combine juices
Pour 1 cup chilled grape juice over the ice, then add 1/2 oz fresh lime juice. If you prefer a slightly sweeter drink or your grape juice is very tart, add 1/2 tsp simple syrup or agave now.
Top with fizz
Slowly top the mixture with 4 oz chilled ginger ale. Pour gently down the side of the glass to preserve effervescence and create a light layering effect.
Stir gently
Using a bar spoon or long teaspoon, give the drink 2 gentle turns to combine the ginger ale with the juices without losing too much carbonation.
Garnish & Serve
Garnish the rim or float a lime wheel on the drink and add a mint sprig for aroma if desired. Serve immediately with a straw or stirrer.
