Cocktail Preparation
Muddle
In a cocktail shaker, add the fresh mint leaves and the dragon fruit purée (or 1–2 chunks of fresh dragon fruit). Add the simple syrup and gently muddle once or twice to release mint oils and incorporate the dragon fruit, taking care not to shred the mint.
Build
Add Tito's Vodka (2 oz), elderflower liqueur (St-Germain) (0.5 oz), pomegranate juice (1.5 oz) and fresh lime juice (0.5 oz) into the shaker with the muddled ingredients.
Shake
Fill the shaker with ice (about 1 cup or enough to nearly fill). Secure the lid and shake vigorously for 10–12 seconds until the outside of the shaker feels cold and slightly frosted.
Strain
Double-strain the mixture into a chilled coupe or a chilled large Nick & Nora glass (or a rocks glass over fresh ice) to remove mint fragments and dragon fruit solids. If serving over ice, fill the glass with fresh ice first, then pour.
Top
Slowly top the cocktail with chilled Brut sparkling wine (about 2 oz) to preserve the bubbles. Pour gently down the side or over the back of a spoon for a gentle layer.
Garnish & Finish
Float a small handful (approx. 1 tbsp) of pomegranate arils on top of the drink for color and texture.
Add a thin dragon fruit slice on the rim or floated on top and finish with a fresh mint sprig tucked into the glass for aroma.
Serve immediately with a cocktail pick or small spoon for the arils. Optionally, express a mint leaf over the glass before garnishing to release additional aroma.
