Combine base

In a large pitcher, pour 3 cups chilled pineapple juice and 2 tablespoons NA pineapple liqueur (pineapple cordial). Stir gently to combine so the cordial dissolves evenly into the juice.

Sweetener & Ginger

Add ginger flavor

Stir in 2 tablespoons ginger syrup to the pineapple mixture. If you prefer a brighter fresh-ginger note, grate 1 teaspoon fresh ginger directly into the pitcher and stir; allow the mixture to sit 5 minutes so the fresh ginger infuses, then strain out solids before serving.

Fizz & Finish

Chill and build

Fill 4 tall glasses with about 3/4 cup ice each (total ~3 cups ice used). Pour the pineapple-ginger mixture evenly into the glasses, filling each about 3/4 full (roughly 1 cup per glass).

Top with ginger beer

Top each glass with chilled ginger beer, dividing 2 cups evenly among the four glasses (about 1/2 cup ginger beer per glass). This adds effervescence and balances sweetness.

Acid balance

Add 1/2 teaspoon fresh lime juice to each glass (total 2 teaspoons across all servings) to brighten the drink and cut sweetness. Stir gently once to combine without losing too much carbonation.

Garnish & serve

Garnish each glass with a pineapple wedge and a sprig of mint. Optionally rub the mint on the rim of the glass first to release aroma. Serve immediately while fizzy.
