Prepare fruit
Peel and dice half a cup of red dragon fruit and quarter half a cup of strawberries. Place the diced dragon fruit and strawberries into a sturdy mixing glass or cocktail shaker.
Add 1.5 oz fresh lime juice and two lime wedges to the mixing glass (reserve one wedge for garnish).
Sweetener & Herbs
Add 1 oz simple syrup (or agave) and 10 fresh mint leaves to the mixing glass.
Muddle
Using a muddler or the back of a spoon, gently muddle the dragon fruit, strawberries, mint leaves and lime wedges for 8–12 seconds. Aim to release juices and mint oils without pulverizing the mint into tiny bits.
Carbonation & Finish
Strain the muddled fruit and herb mixture over the ice into the serving glass. If you like a bit of texture, use a fine mesh strainer to leave some small fruit flecks; for a cleaner look, strain through a cocktail strainer and discard solids.
Top with 6 oz chilled club soda or sparkling water and gently stir twice to combine. If using the optional 0.5 oz nonalcoholic rum alternative, add it before topping with soda and briefly stir.
Garnish with a slice of dragon fruit or a fresh strawberry and a sprig of mint. Serve immediately with a straw.
