Assemble sandwiches

Lay out 8 slices of bread (for four sandwiches). Spread about 2 tablespoons of creamy peanut butter evenly on four slices. Spread about 2 tablespoons of grape jelly on the other four slices. Press matching slices together to form 4 sandwiches (peanut butter to jelly).

Trim and seal

Using a sharp knife, trim off the crusts from each sandwich if you prefer a smooth edge (optional). Lightly brush a thin layer of softened unsalted butter along the outer edge of each sandwich and press edges firmly to seal. For extra security, use a fork to crimp edges like a hand pie, or use a pastry crimper—this helps prevent filling leakage during frying.

Chill briefly

Place sandwiches on a plate and chill in the refrigerator for 10–15 minutes to firm up the fillings and ensure better sealing during frying. If you want an even firmer interior, freeze for 20–30 minutes (do not freeze solid).

Waffle Batter (for coating)

Prepare dry ingredients

In a medium bowl, whisk together 1 cup all-purpose flour, 2 teaspoons granulated sugar, 1 teaspoon baking powder, and a pinch of fine salt until evenly combined.

Combine wet ingredients

In a separate bowl, whisk 1 large egg with 3 tablespoons milk, 1 cup buttermilk, 2 tablespoons melted unsalted butter, and 1 teaspoon pure vanilla extract until smooth and homogenous.

Make batter

Pour the wet mixture into the dry ingredients and whisk just until combined. The batter should be smooth and thick enough to coat the sandwiches (similar to Belgian waffle batter). If batter is too thick, add up to 1–2 tablespoons milk to loosen; if too thin, add 1 tablespoon flour. Let batter rest 5–10 minutes to hydrate the flour.

Heat oil

Pour neutral frying oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches (roughly 1 liter in a medium pot). Heat oil over medium heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small spoonful of batter — it should sizzle and float steadily without burning.

Coat sandwiches

Working with one sandwich at a time, hold the sandwich with tongs and dip it into the waffle batter, fully coating all sides. Allow excess batter to drip back into the bowl for 5–10 seconds so the coating is even but not dripping excessively. For a thicker crust, you can double-dip: first coat, drain 30 seconds, then coat again.

Fry sandwiches

Carefully lower the battered sandwich into the hot oil. Fry 1–2 sandwiches at a time depending on pot size — don’t overcrowd. Fry for 2.5–4 minutes, turning gently once halfway, until the exterior is deep golden brown and crisp. Maintain oil temperature around 330–350°F (165–175°C) for even cooking. If the interior was chilled or partially frozen, add 30–60 seconds to fry time and reduce heat slightly to avoid over-browning.

Drain and rest

Use a slotted spoon or spider to remove the sandwich and transfer to a wire rack set over a baking sheet lined with paper towels. Let drain and rest 1–2 minutes; this lets excess oil drip and the interior cool slightly so fillings don’t erupt when cut.

Finish and serve

Dust the warm fried PB&J generously with powdered sugar. Drizzle raspberry syrup over the top in a decorative pattern and finish with a small pinch of fine sea salt if desired to heighten the flavors. Cut each sandwich diagonally in half for service. Serve immediately while warm and crisp alongside extra raspberry syrup for dipping.
