Preparation
Marinate the Chicken
In a large bowl, combine the olive oil, minced garlic, grated ginger, soy sauce, honey, sesame oil, red pepper flakes, salt, and black pepper. Add the boneless chicken thighs to the bowl and mix well to ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
Cooking
Cook the Chicken
Heat a skillet over medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off. Place the chicken in the hot skillet and cook for about 5-7 minutes on each side or until the chicken is cooked through and has a nice golden brown color. Use a meat thermometer to ensure the internal temperature reaches 75°C (165°F).
Prepare the Garnish
While the chicken is cooking, chop the green onions finely. Once the chicken is done, remove it from the skillet and let it rest for a few minutes. Slice the chicken into strips.
Serving
Plate the Dish
Arrange the sliced chicken on a serving platter. Sprinkle the chopped green onions and sesame seeds over the top as a garnish. Serve hot with steamed rice or noodles if desired.
