Tofu Akuri (spiced scrambled tofu)

    Prepare tofu

    Drain the extra-firm tofu and press for 10–15 minutes to remove excess moisture. Crumble the pressed tofu into bite-sized, irregular pieces with your hands or a fork so it resembles scrambled eggs.

    Cook aromatics

    Heat 2 tbs olive oil in a nonstick skillet over medium heat. Add the finely chopped onion (about 3/4 cup) and sauté 4–5 minutes until translucent and starting to brown at the edges. Add the minced garlic, grated ginger and chopped green chili (if using) and cook 30–45 seconds until fragrant.

    Spice and tomato

    Reduce heat slightly and add turmeric, ground coriander, ground cumin and half of the garam masala. Stir for 20–30 seconds to bloom the spices. Add the chopped tomato (or canned diced) and 1 tsp ketchup or 1 tsp tomato paste. Cook 2–3 minutes until the tomato softens and releases juices.

    Combine tofu and season

    Add the crumbled tofu to the skillet, stirring to coat with the spiced tomato mixture. Add 1 tbs soy sauce/tamari and 1/2 tsp black salt (or to taste). If the mixture looks dry, add up to 2 tbs water to loosen. Cook 4–6 minutes, stirring occasionally, until the tofu warms through and the flavors meld.

    Finish akuri

    Stir in the remaining 1/2 tsp garam masala, 2 tbs chopped fresh cilantro and 1 tbs lemon juice. Taste and adjust salt, spice or acidity. Keep warm off heat until assembly.

Vegan Sausages & Black Pudding

    Cook sausages

    Heat 1 tbs oil in a separate skillet over medium heat. Prick the vegan sausages a couple times with a fork to prevent splitting. Cook sausages 8–10 minutes, turning occasionally, until browned and heated through. If sausages are pre-cooked, brown 4–6 minutes to develop color.

    Cook black pudding

    In the same or another skillet, heat 1 tbs oil over medium-high. Slice the vegan black pudding into 1/2-inch rounds. Fry for 2–3 minutes per side until crisp and browned on both sides. Reduce heat if it starts to burn and remove to a paper towel-lined plate to drain.

    Prepare hash browns/potatoes

    If using frozen hash browns, cook according to package instructions until golden and crisp. If using fresh potatoes: parboil diced potatoes 6–8 minutes until just tender, drain, then pan-fry in 1 tbs oil over medium-high heat, pressing occasionally, until crisp and golden (10–12 minutes). Season with salt and pepper.

    Warm baked beans and grill tomatoes

    Warm the vegan baked beans in a small saucepan over low heat, stirring occasionally. Heat a grill pan or skillet and grill halved tomatoes cut-side down for 3–4 minutes until softened and slightly charred. Season tomatoes with a pinch of salt.

    Toast bread

    Toast or grill the bread slices until golden and slightly crisp. If desired, rub with a little garlic or brush with vegan butter.

    Plate and serve

    Divide the toasted bread or rolls between 2 plates (serves 2). Spoon a generous portion of tofu akuri onto each plate. Arrange 2 vegan sausages and half the black pudding slices beside the akuri. Add a portion of hash browns, a scoop of warm baked beans, and a grilled tomato half. Scatter a small handful of fresh spinach or rocket on the plate and drizzle akuri or bread with hot sauce or chutney to taste. Serve immediately.
