Preparation

    Chill glass

    Place a coupe or martini glass in the freezer or fill it with ice water while you prepare the cocktail so the sparkling wine stays lively when served.

    Measure ingredients

    Measure 1.5 oz Finlandia Vodka, 0.75 oz passion fruit liqueur, and (if using) 0.25 oz simple syrup into a mixing glass or shaker.

    Add bitters

    Add 2 dashes of vanilla bitters to the mixing glass with the vodka and liqueur.

    Add ice and stir

    Add about 1 cup of ice to the mixing glass or shaker. Stir gently for 12–15 seconds (or briskly if using a shaker briefly) to chill and dilute the spirit/liqueur mixture. The goal is to bring mixture to near 32–38°F (0–3°C) and achieve slight dilution.

    Strain into chilled glass

    Discard ice from the chilled coupe or remove glass from freezer. Double-strain (or fine-strain) the chilled vodka/liqueur/bitters blend into the chilled glass to keep the drink silky and free of ice shards.

    Top with sparkling wine

    Gently top the cocktail with 2.5 oz chilled Brut or extra-dry sparkling wine. Pour slowly down the side of the glass or over the back of a spoon to maintain effervescence and avoid excessive foaming.

    Add fresh passion fruit (optional)

    Spoon a half passion fruit pulp into the center of the cocktail as a floating garnish, or lightly bruise a bit of the pulp into the top for aroma and texture. If the passion fruit is very tart, add the optional 0.25 oz simple syrup earlier when measuring.

    Finish and serve

    If desired, skewer a small piece of passion fruit shell or a twist of citrus on a cocktail pick and rest it across the rim. Serve immediately while sparkling wine is lively.
