Cocktail

Method

Cocktail

  1. 1

    Chill glass

Place a martini or coupe glass in the freezer for at least 5 minutes, or fill it with ice water while you prepare the cocktail.

  2. 2

    Combine ingredients

In a cocktail shaker, add vodka (2 oz), elderflower liqueur (0.5 oz), fresh lemon juice (0.75 oz), fresh orange juice (0.5 oz), simple syrup (0.5 oz), and orange bitters (2 dashes). If using egg white (0.5 each), add it now for a silky texture.

  3. 3

Dry shake (if using egg white)

If you added egg white, dry shake (no ice) vigorously for 15–20 seconds to emulsify and create foam.

  4. 4

    Shake with ice

Add ice (about 1 cup or enough to fill the shaker) to the shaker. Shake vigorously for 12–15 seconds until the shaker is cold to the touch and well-diluted.

  5. 5

    Double strain

Remove the glass from the freezer or dump the ice water. Double strain the cocktail through a fine mesh strainer into the chilled martini/coupe glass to remove tiny ice shards and any egg white solids for a smooth finish.

Garnish & Finish

  1. 6

Float or place a thin starfruit slice or an orange wheel on the surface of the cocktail. If you like a touch of sparkle, sprinkle a very small pinch (about 1/4 tsp) of edible glitter or superfine sugar over the top — use sparingly so it doesn’t alter flavor. Express a lemon twist over the drink (pinch the peel to release oils) and discard or rest it on the rim for aroma.

  2. 7

Serve immediately. The Sunny's Star-Tini is best enjoyed chilled and consumed within a few minutes while the foam (if used) is fresh and the garnish is visually striking.
