    Combine spirits

    Add 1 oz gin, 1 oz sweet vermouth and 1 oz Campari to a mixing glass.

    Add chocolate elements

    Add 0.5 oz cocoa nib-infused chocolate vermouth (or chocolate liqueur), 2 dashes cacao bitters and 0.25 oz demerara syrup to the mixing glass. These add the Padmini chocolate twist and a touch of soft sweetness to balance the bitter Campari.

    Add ice and stir

    Fill the mixing glass with plenty of ice and stir gently for 20–30 seconds (about 30–40 revolutions) until the mixture is well chilled and properly diluted (~20–25% dilution). Stirring chills, dilutes and integrates the chocolate notes without clouding the drink.

Strain & Serve

    Prepare glass

    Place a single large clear ice cube in a chilled old-fashioned glass (or use chilled rocks glass with fresh ice).

    Strain

    Strain the mixed Negroni over the ice cube using a Hawthorne or julep strainer for a clean pour.

    Express orange oils

    Take the orange peel and, over the drink, pinch it to express the citrus oils across the surface, then rub the peel’s rim on the glass for aroma.

    Garnish

    Drop the expressed orange peel into the glass. Using a microplane or fine grater, grate about 1/4 teaspoon of dark chocolate or finely ground cocoa nibs over the top of the drink to create a delicate chocolate aroma and visual nod to the Padmini twist.

    Serve

    Serve immediately while chilled. Sip slowly to appreciate the interplay of bitter, botanical and cocoa notes.
