- 1
Chill glass (optional)
If you prefer a colder drinking experience, place the rocks glass in the freezer for 5–10 minutes or fill it with ice and water while you prepare the cocktail, then discard the ice water before pouring.
- 2
Add the rye whiskey (2 oz), the secondary whiskey or high-rye bourbon (0.5 oz), amaro (0.5 oz), chocolate bitters (2 dashes), angostura bitters (1 dash) and simple syrup (0.25 oz) into a mixing glass or cocktail shaker filled with large ice.

- 4
Discard the ice or water from the chilled rocks glass if you used that method. Place one large ice sphere or large clear cube into the rocks glass.
- 5
Strain the stirred cocktail over the single large ice into the rocks glass using a hawthorne or julep strainer to keep ice shards out.
- 6
- 7
Garnish with a maraschino cherry if desired. Serve immediately.

Tasting notes: This 'New Permit Room Old-Fashioned' is a peg (larger single-serve pour) that layers rye spice with a splash of sweeter, richer bourbon and bitter herbal notes from the amaro; chocolate bitters amplify cacao/roasted notes for depth.
