1. Combine
In a mixing glass or small tin, add 2 oz rye whiskey, 0.25 oz demerara rum, 0.25 oz simple syrup, 2 dashes Angostura bitters, 1 dash orange bitters and 0.25 oz water.
2. Stir
Fill the mixing glass with large ice or regular ice and stir briskly for 20–30 seconds (about 20–30 full rotations) until the drink is well chilled and slightly diluted.
3. Prepare glass
Place a large ice cube into an old-fashioned glass.
4. Strain
Double-strain or fine-strain the chilled cocktail over the large ice cube in the glass to remove any small ice chips.

5. Express orange oil
Take an orange peel, hold it skin-side down over the glass and firmly pinch to express the oils across the surface of the drink. Rub the peel around the rim briefly to release aroma.
6. Garnish
Drop the expressed orange peel into the glass or lay it on the ice. Optionally add a Luxardo cherry on a pick beside or atop the peel.
7. Serve immediately and enjoy. The demerara rum adds a deeper molasses note while the small amount of water and stirring ensures a silky texture — this is the New Permit Room take on an Old-Fashioned.
