Prepare spices
Lightly crush the cardamom pods and peppercorns with the flat of a knife or a mortar and pestle. Set aside.
In a small saucepan, combine 1 cup water, sliced ginger, crushed cardamom, cloves, crushed peppercorns and the cinnamon stick. Bring to a gentle boil over medium heat.
Reduce heat to low and simmer the spice mixture, uncovered, for 5 minutes to extract flavors.
Add the 2 tablespoons black tea leaves (or 2 strong tea bags) to the simmering spiced water. Allow tea to steep on low heat for 2–3 minutes for a robust brew. Do not over-steep to avoid excessive bitterness.
Chocolate & Sweetening
Whisk in 1 teaspoon unsweetened cocoa powder first so it disperses evenly into the warm chai.
Add 2 tablespoons finely chopped dark chocolate and 1.5 tablespoons brown sugar to the simmering chai. Stir constantly until the chocolate and sugar have melted and the mixture is smooth, about 1–2 minutes.
Taste and adjust sweetness or chocolate intensity: add the optional 1 teaspoon maple syrup or honey if you prefer a sweeter, rounder finish.
Finish & Garnish
Remove the saucepan from heat. Stir in 1/4 teaspoon vanilla extract and a pinch of sea salt to enhance and balance the chocolate and spice flavors.
Strain the Naughty Chocolate Chai through a fine mesh sieve into a heatproof pitcher or directly into cups to remove tea leaves and whole spices.
If using, top each cup with a spoonful of whipped cream. Dust with grated chocolate or a light sprinkle of cocoa powder. Serve immediately while hot.
