    If using dry beans

    Rinse 2 cups dry beans under cold water. Soak in plenty of water for 6–8 hours or overnight. Drain and rinse again.

    Cook dry beans

    Place soaked beans in a pot with 4 cups stock (or water plus 1 tsp salt). Bring to a boil, reduce to a simmer, cover partially and cook until tender, 45–60 minutes depending on bean type. Skim foam as needed. Add water if they look dry. Once tender, reserve cooking liquid and drain excess if necessary so beans sit in about 1 to 1.5 cups of liquid (adjust for desired final consistency).

    If using canned beans

    Drain and rinse two 15-oz cans (approx. 2 cups drained) of beans. Reserve 1 cup of the can liquid or use stock/water to reach desired consistency during simmering.

    Season cooked or canned beans with 1 tsp salt (adjust later). Keep warm while preparing masala.

Masala (sauce) Ingredients

    Heat 3 tbsp oil or ghee in a wide skillet or shallow saucepan over medium heat.

    When oil is hot, add 1 tsp cumin seeds and 1/2 tsp mustard seeds (if using). Let them sizzle and pop for 20–30 seconds, being careful not to burn.

    Add 1 cup finely chopped onion. Sauté, stirring occasionally, until onions turn soft and golden, about 6–8 minutes. Reduce heat if browning too quickly.

    Add minced garlic (4 cloves), minced ginger (1 tbsp), and chopped green chili (if using). Cook 1–2 minutes until fragrant.

    Stir in 1.5 cups chopped tomato (fresh or canned) and 1 tbsp tomato paste if using. Cook until tomatoes break down and oil begins to separate from the masala, about 6–8 minutes.

    Add 1/2 tsp turmeric, 1 tsp ground coriander, 1 tsp ground cumin, 1/2 tsp red chili powder (or paprika), and 3/4 tsp garam masala. Stir and cook 1–2 minutes to toast the spices and remove raw edge.

    If the masala becomes too thick or sticks, add 2–4 tbsp reserved bean liquid or water to loosen it. Simmer for another 2 minutes.

Combine & Simmer

    Add the cooked or canned beans and about 1 cup of the reserved bean cooking liquid or stock to the masala. Gently stir to combine, taking care not to mash the beans unless you prefer a thicker texture.

    Bring to a gentle simmer and cook uncovered for 8–12 minutes so flavors meld and sauce thickens slightly. Stir occasionally and adjust consistency with additional water or stock if too thick.

    Taste and adjust salt (add more if needed) and spice level. If the sauce is too acidic, add a pinch of sugar; if it needs brightness, add 1 tbsp lemon juice or a little tamarind concentrate now.

Finishing & Garnish

    Off the heat, stir in 1 tsp butter or a drizzle of oil (optional) for gloss and richness.

    Sprinkle 1/4 cup chopped cilantro and 1/4 tsp freshly ground black pepper over the beans.

    Serve hot with rice, flatbread (roti/naan) or as a side. Leftovers keep in the refrigerator for up to 4 days; reheat gently, adding a splash of water or stock if thickened.
