Chilli Cheese Toast

    Prepare chilli butter

    In a small bowl, combine the softened butter, grated garlic, finely chopped green chile, chopped tomato, chopped cilantro, lime juice, red chili flakes (if using) and 1/8 tsp salt. Mix until evenly combined.

    Assemble toast

    Spread half of the chilli butter mixture evenly over one side of each bread slice. Sprinkle the grated cheese evenly on top of the chilli-buttered side, pressing gently so cheese adheres. Season the cheese lightly with the remaining pinch of salt.

    Grill the toast

    Heat a non-stick skillet or griddle over medium (about 325–350°F / moderate). Place the prepared bread, buttered/cheese side up, and cover the skillet with a lid or a baking sheet to help cheese melt. Cook 3–4 minutes until the undersides are golden and the cheese has melted. Alternatively, place under a hot broiler (2–3 inches from heat) for 2–3 minutes, watching closely to avoid burning, until cheese is bubbly and slightly browned.

    Heat pan

    While the toast is grilling, heat a separate non-stick skillet over medium-low heat. Add the oil and butter and let the butter foam but not brown.

    Fry eggs

    Crack each egg into a small bowl or cup (one at a time) and gently slide into the skillet. Cook gently for 2–3 minutes for set whites and runny yolks (sunny-side up). For slightly set yolks, cover the pan for 30–60 seconds. For over-easy, gently flip the eggs after 90–120 seconds and cook 15–20 seconds more. Season each egg with a pinch of salt and a grind of black pepper while cooking.

    Keep warm

    If toast finishes before eggs, keep cooked eggs in a warm (low) oven (about 90–100°C / 200°F) for a few minutes so everything is hot together.

Assembly & Finish

    Place each hot cheese toast on a plate, cheese side up. Gently set one fried egg on top of each slice (two eggs on two slices, or place both eggs on one large slice as desired). Sprinkle chopped cilantro or spring onion over the eggs and a pinch of red chili powder or extra chili flakes if you like more heat.

    Serve immediately while eggs are hot and yolks runny, with a wedge of lime on the side if desired.
