Ginger Syrup

    Make ginger syrup

    Combine sliced fresh ginger, sugar, and water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat and simmer 5–7 minutes to infuse. Remove from heat and let cool to room temperature, then strain through a fine mesh into a jar. Refrigerate. Yields about 8 fl oz; use 0.5 oz per cocktail.

    Prepare glass

    Chill a coupe or martini glass by placing it in the freezer for a few minutes or filling with ice water while you mix the drink.

    Muddle chili (optional)

    If you want a gentle chili heat, place the halved Indian green chili in the shaker and lightly muddle 1–2 times to release oils. Do not over-muddle or you will make the drink too hot and bitter. Remove seeds if you want milder heat.

    Shake

    Add 2 oz gin, 0.75 oz fresh lime juice, 0.5 oz ginger syrup, 0.25 oz simple syrup, and a large handful of ice to a cocktail shaker. Cap and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosty.

    Double strain

    Discard the ice or water from the chilled glass. Double-strain the contents of the shaker into the chilled coupe using a Hawthorne strainer and a fine mesh strainer to remove chili bits and ice shards for a silky texture.

    Garnish & serve

    Express the oils of a lime twist over the drink and either drop the twist or a thin lime wheel onto the surface. Optionally float a cilantro leaf for an herbaceous aroma. Serve immediately.
