Method

Spiced pineapple syrup (prepare ahead, yields ~1 cup)

    Combine and simmer

    In a small saucepan combine pineapple chunks, sugar, water, sliced ginger, cloves, and cinnamon (or cinnamon stick). Bring to a gentle simmer over medium heat, stirring until sugar dissolves.

    Lower heat and simmer gently for 8–10 minutes to extract flavor from pineapple and spices. If using fresh lime zest, add in the last 2 minutes of simmering.

    Remove from heat. Let cool slightly, then strain the mixture through a fine mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract syrup. Discard solids. Chill syrup before using. Refrigerated, syrup keeps 7–10 days.

Cocktail assembly

    Muddle ginger and mint: In a cocktail shaker or mixing glass, place the 0.5 oz thinly sliced fresh ginger and 8 of the spearmint leaves (reserve 2 leaves for garnish). Gently muddle 6–8 times to release ginger juice and mint oils — do not over-muddle the mint or it will turn bitter.

    Add liquids: Add 2 oz Diplomático rum, 0.75 oz fresh lime juice, 0.75 oz chilled spiced pineapple syrup, and 2 dashes Angostura bitters into the shaker with the muddled ginger and mint.

    Dry shake (optional): For extra integration of ginger and mint flavors, dry shake (no ice) for 8–10 seconds. This brightens aromatics.

    Add ice and shake: Add a handful of ice to the shaker and shake vigorously for 10–12 seconds to chill and dilute appropriately.

    Strain into glass: Fill a tall (Collins/tall) glass with crushed ice. Double-strain the cocktail through a fine mesh strainer into the glass to remove large ginger pieces and mint bits.

    Top and finish: Top gently with about 2 oz club soda to give it lift. Stir once gently to integrate soda.

    Garnish and serve: Slap the reserved spearmint sprig between your palms to release aroma, then tuck it into the drink alongside a thin pineapple wedge. Serve with a straw.
