Make simple syrup
Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Heat gently over medium-low, stirring until the sugar fully dissolves. Remove from heat and cool to room temperature. Store in the refrigerator; use 1/2 oz for this cocktail.

Muddle mint and syrup
In a mixing glass or cocktail shaker, add 8 fresh mint leaves and 0.5 oz simple syrup. Gently slap or muddle the mint 4–6 times—press just enough to bruise the leaves and release oils without shredding them.

Add spirits and citrus
Add 2 oz bourbon, 0.5 oz peach liqueur, and 0.5 oz fresh lemon juice to the muddled mint and syrup.

Shake with ice
Fill the shaker with ice (about 4–6 large cubes), secure the lid, and shake vigorously for 10–12 seconds until well-chilled and slightly diluted.

Prepare glass
Fill a julep cup or a rocks glass (or Collins glass) to the brim with crushed ice.

Strain and build
Double-strain the cocktail over the crushed ice (use a fine mesh strainer in addition to the shaker strainer to keep mint fragments out). Gently mound more crushed ice on top if needed to form a dome.

Garnish and serve
Garnish with a fresh mint sprig and a lemon wheel tucked into the ice. Clap the mint sprig once between your palms to release aroma before placing it in the glass. Serve immediately with a straw or short stirring spoon.
