Method

Prepare spices

    Crush cardamom

    Lightly crush the cardamom pods using the flat side of a knife or a mortar and pestle to expose the seeds. If you prefer a smoother final drink, remove the shells and crush only the seeds.

    Measure and combine the ground turmeric, grated ginger, ground cinnamon, and ground black pepper in a small bowl so they are ready to add to the milk. Stir briefly to mix.

Cook milk

    Heat liquids

    Pour 3 cups whole milk and 1 cup water into a medium saucepan. Place over medium heat and warm until the milk begins to steam and small bubbles form around the edges (do not let it come to a rapid boiling).

    Bloom spices

    Add the prepared spice mixture (turmeric, grated ginger, cinnamon, black pepper) and the crushed cardamom pods to the milk. Stir to combine so the spices are evenly distributed.

    Simmer gently

    Reduce heat to low and let the milk simmer gently for 7–10 minutes, uncovered or partially covered, stirring occasionally to prevent any sticking or skin from forming. This extracts flavor from the ginger and cardamom and fully hydrates the turmeric.

Finish & sweeten

    Add fat for richness

    Stir in 1 teaspoon ghee or coconut oil. This helps absorb turmeric's active compounds and gives a richer mouthfeel.

    Strain (if desired)

    If you prefer a smooth drink without fibrous ginger or cardamom husks, pour the milk through a fine-mesh sieve or cheesecloth into a heatproof pitcher or saucepan.

    Sweeten and balance

    While the milk is warm (not boiling), stir in 2 teaspoons honey or maple syrup to taste. Taste and adjust sweetness if needed. If you want more warmth, add an extra pinch (1/8 teaspoon) of ground cinnamon.

Serve

    Ladle the hot doodh haldi into cups. Garnish each cup with a light dusting (about 1/8–1/4 teaspoon) of ground cinnamon and a sprinkle of slivered almonds or pistachios (about 1/2 tablespoon per cup).

    Drink warm. Leftovers can be refrigerated for up to 2 days and reheated gently on the stove; whisk briefly when reheating to recombine any separated fat.
