Fresh Mint Tea (Pot)

    Prepare the mint

    Rinse 1 cup of fresh mint leaves under cold running water to remove dirt or grit. Gently pat the leaves dry with a clean towel or spin in a salad spinner. Remove any tough stems, reserving mostly leaves and tender stems. Lightly bruise the leaves by crushing them between your fingers or gently rolling them to release essential oils.

    Boil the water

    Pour 8 cups of fresh water into a medium-to-large saucepan or the kettle. Bring water to a full rolling boil over high heat.

    Steep the mint

    Remove the boiling water from heat and immediately add the bruised mint leaves to the pot. Cover the pot with a lid to trap the volatile oils and let the mint steep. For a mild flavor steep 5 minutes; for medium 8–10 minutes; for strong 12–15 minutes. Taste after 8 minutes and steep longer if you prefer more intensity.

    Sweeten (optional)

    If you want sweetened tea, stir in 2 tablespoons granulated sugar while the tea is still hot so it dissolves easily. Alternatively use 1 tablespoon honey (stir until fully dissolved). Adjust sweetness to taste. If you added lemon slices, add them after sweetening to avoid curdling honey flavor.

    Strain and serve hot

    Place a fine-mesh sieve or tea strainer over a teapot or heatproof pitcher and pour the steeped mint tea through it to remove leaves. Discard leaves. Pour into cups and serve immediately. Garnish each cup with a lemon slice if desired.

    Make iced mint tea (optional)

    To serve iced, fill a large pitcher with 2 cups of ice. Pour the strained hot tea over the ice to rapidly cool it and slightly dilute to a pleasant strength. Alternatively, chill the strained tea in the refrigerator until cold, then serve over ice. Add lemon slices and additional mint sprigs as garnish.

    Storage

    Let leftover tea cool to room temperature, transfer to a covered container, and refrigerate for up to 3 days. Reheat gently on the stove for hot service, or serve chilled over ice.
