Matcha Sour

Matcha Preparation

Whisk matcha
Sift 1 tsp of matcha powder into a small bowl to remove clumps. Add 2 tablespoons of hot (not boiling, about 80°C / 175°F) water and whisk briskly in a zigzag motion with a small bamboo whisk or small regular whisk until fully dissolved and frothy, about 15–30 seconds. Set aside to cool slightly.
Cocktail Build

Dry shake
Add 2 oz gin (or bourbon), 0.75 oz fresh lemon juice, 0.75 oz simple syrup, the cooled matcha mixture, and 1 egg white (or aquafaba) to a cocktail shaker with no ice. Seal and shake vigorously for 15–20 seconds to emulsify and create foam.

Wet shake
Open the shaker, add 1 cup of ice, reseal, and shake hard for 12–15 seconds until the shaker is cold to the touch and well chilled.

Strain & serve
Double-strain the cocktail into a chilled coupe or rocks glass over 4 ice cubes (or neat into a coupe if preferred). Use a fine mesh strainer to remove any ice chips and any matcha particles for a silky texture.

Garnish
Finish with a thin lemon twist expressed over the drink and rested on the rim, or lightly dust a pinch of matcha powder over the foam for an elegant look. Serve immediately.
