Bacon Filling

    Prepare and Crisp Bacon

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay the 12 slices of thick-cut bacon in a single layer on the rack. In a small bowl, mix 1 tablespoon olive oil, 1 tablespoon brown sugar and 1/2 teaspoon black pepper. Brush or spoon the mixture lightly over the bacon slices. Bake for 15–20 minutes until bacon is crisp but not overly brittle. Remove and transfer to a paper-towel-lined plate to drain. Reserve 8 slices whole for rolling and chop the remaining 4 slices into 1/2-inch pieces for mixing with the cheese.

    Prepare Garlic-Butter

    While the bacon bakes, melt 3 tablespoons unsalted butter in a small saucepan or microwave. Mince 3 garlic cloves and stir into the melted butter along with 2 tablespoons finely chopped fresh parsley. Set aside.

    Make Cheese Spread

    In a medium bowl, combine 4 oz softened cream cheese, 2 cups shredded cheddar, the chopped 4 bacon slices reserved earlier, 3 sliced green onions (white and green parts thinly sliced), 1 teaspoon hot sauce, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Mix until evenly combined and spreadable. Taste and adjust seasoning or hot sauce to preference.

    Assemble Rolls

    Warm the 4 store-bought naan just until pliable (30–60 seconds in microwave or 1 minute in a 350°F oven). Lay one naan flat, brush a thin, even layer of garlic-butter over the surface. Spread about 1/4 of the cheese-bacon mixture lengthwise down the center of the naan, leaving 1/2-inch border. Lay 2 slices of the reserved whole crisp bacon on top of the spread (slightly overlapping). Starting at one long edge, fold the naan over the filling and roll tightly into a log, tucking the ends under. Repeat with remaining naan and fillings to make 4 rolls.

    Finish and Melt

    Place the assembled rolls seam-side down on a parchment-lined baking sheet. Brush tops with additional garlic-butter. If desired, sprinkle 1 teaspoon sesame seeds and 1/4 teaspoon chili flakes across rolls. Bake at 375°F (190°C) for 8–10 minutes until warmed through and cheese is melty and edges are lightly golden. For extra browning, broil 1–2 minutes while watching closely.

    Rest and Slice

    Remove from oven and let rest 2–3 minutes. Slice each roll in half or into 3 pieces for sharing. Garnish with remaining chopped parsley and extra green onion if desired. Serve warm.
