    Build and chill

    Add the dark rum, overproof rum, fresh lime juice, demerara syrup, falernum and both bitters into a mixing glass or shaker filled with ice.

    Stir

    Stir well for 20–30 seconds until the exterior of the mixing glass is nicely chilled and the mixture is slightly diluted (~15–20% dilution).

    Prepare glass

    Place a single large ice cube or a few large rocks into an old-fashioned glass (rocks glass).

    Strain

    Fine-strain or double-strain the cocktail over the large ice in the prepared glass, ensuring a clean, clear pour without shards of ice.

Garnish & Finish

    Express the oils of a lime peel over the surface of the drink, then rub the peel around the rim and drop it into the glass as garnish. Optionally, grate a small amount of fresh nutmeg or dust a pinch of whole spice over the top for an aromatic flourish.

    Serve immediately. The drink is intended to be sipped slowly — the overproof rum provides a discreet warmth beneath the dark-rum backbone.
