Method

Prep & Water

    Measure water

    Measure 4 cups of filtered water (about 950 ml). Using filtered water helps preserve the delicate aroma of Darjeeling green tea.

    Heat water

    Bring the water to a gentle temperature of 175°F to 185°F (80°C to 85°C). If you don't have a thermometer, bring to a simmer and remove from heat as soon as small steam rises and before a rolling boil.

    Warm the teapot

    Pour a little of the hot water into the teapot, swirl to warm it, then discard that water. Warming the pot helps maintain infusion temperature.

Steeping

    Add tea leaves

    Place 2 teaspoons of Darjeeling green tea leaves into the teapot infuser (use about 1 teaspoon per cup as a guideline; adjust to taste).

    Pour water over leaves

    Pour the heated water (cooled to 175–185°F / 80–85°C) over the tea leaves in the teapot.

    Steep time

    Let the tea steep for 2 to 3 minutes. For a lighter cup, steep closer to 2 minutes; for a fuller flavor without bitterness, do not exceed 3 minutes.

    Remove leaves

    When steeping is complete, remove the infuser or strain the tea into another vessel so the leaves do not continue to steep and make the tea bitter.

Serve & Finish

    Taste and sweeten

    Taste the brewed tea. If desired, sweeten with up to 2 teaspoons of honey or sugar, stirring until dissolved. Start with less and add more to taste.

    Optional garnish

    Add a slice of lemon to a cup or a few fresh mint leaves to the pot for a bright variation. If using lemon, add after sweetening to avoid curdling of honey (honey is fine with lemon, but some prefer adding lemon last).

    Serve

    Pour the tea into warmed cups and serve immediately. Expect roughly 4 cups of brewed tea (serving size: 1 cup each).
