Method

Prepare crunchy components

    Roast peanuts (if raw)

    If using raw peanuts, dry-roast in a skillet over medium heat for 5–7 minutes, stirring frequently, until golden and fragrant. Cool, then roughly chop or keep whole according to preference.

    If papdi or puris are used and not already crisp, break them into bite-sized pieces and set aside. Keep sev covered so it stays crisp until final toss.

Prepare fresh vegetables and herbs

    Finely chop the red onion and tomato. If tomatoes are very juicy, remove some seeds/pulp to avoid soggy bhel. Finely chop mint, cilantro and green chili. Place all fresh components in a mixing bowl and toss together.

    Add the pomegranate arils to the bowl with the chopped vegetables. This adds crunch, color, and sweet-tart contrast.

Make dressing and season

    In a small bowl, combine tamarind chutney, green chutney, and fresh lime juice. Stir to a smooth mixture. Taste and adjust: add more tamarind chutney for sweetness, more green chutney for heat/herbiness, or more lime for brightness.

    Sprinkle chaat masala, roasted cumin powder, red chili powder, and black salt into the chutney-lime mixture and whisk briefly to incorporate. Keep this dressing ready to add to the bhel.

Assemble Bhel

    Place the puffed rice in a large mixing bowl. Add the roasted peanuts, broken papdi (if using), and about three-quarters of the sev — reserve some sev for garnish so it stays crisp on top.

    Add the bowl of chopped tomato, onion, herbs, green chili and pomegranate arils to the puffed rice mixture. Toss gently to combine, taking care not to crush the puffed rice.

    Pour the prepared chutney-lime dressing evenly over the mixture. Toss briskly but gently to coat everything. The dressing should moisten the mixture without making it soggy—add in stages and taste as you go.

    Taste and adjust seasoning: add a little more chaat masala, salt, or lime juice if needed. If you want it sweeter, add a touch more tamarind chutney.

    Transfer to serving bowls immediately. Sprinkle the reserved sev on top for crunch, and garnish with a few extra mint leaves and pomegranate arils.

Serving and timing

    Serve Bhel immediately after tossing. Puffed rice loses its crispness quickly once dressed; assembled bhel is best eaten within 10–15 minutes. If preparing for a group, keep components separate and let guests assemble their own to keep everything crunchy.
