Method
Cocktail
Prepare and Shake
Chill a martini (coupe) glass in the freezer or fill it with ice water to chill while you prepare the drink. In a cocktail shaker combine 2 oz vodka, 0.5 oz elderflower liqueur, 0.75 oz fresh lemon juice, 0.5 oz fresh orange juice, 0.5 oz starfruit syrup (or simple syrup if unavailable), and 0.5 oz egg white if using for a silky foam. Add 6 ice cubes to the shaker.
Strain
Discard the ice or water from the chilled glass. Double-strain the cocktail into the chilled martini or coupe glass using a Hawthorne and fine mesh strainer to remove ice shards and create a smooth texture.
Garnish & Finish
Float a thin starfruit slice on the foam or lay it on the rim of the glass. Twist a lemon peel over the drink to express oils, rub it around the glass rim if desired, and drop it in. Lightly dust the surface with a pinch (about 1/4 tsp) of edible gold dust or glitter for a starry shimmer if using. Serve immediately.
