Extract and dissolve

If using whole passion fruits, cut them in half and scoop out enough to measure 1 cup of pulp (pulp includes seeds). Place the pulp in a heatproof bowl. Pour 1 cup of hot water (just off the boil) over the pulp to help release more juice and soften the membranes. Stir gently for 1 minute.

Make syrup

While the pulp is warm, add 1/2 cup granulated sugar and stir until fully dissolved, about 1–2 minutes. Taste and adjust sweetness—if you prefer a sweeter sharbat add up to 2 tablespoons more sugar while warm so it dissolves completely.

Optional seed straining

If you prefer a seedless drink, set a fine-mesh sieve over a bowl or pitcher and press the pulp with the back of a spoon to extract juice, leaving seeds and coarse membrane behind. Reserve the extracted juice. If you like the texture and crunchy seeds, skip this step and use the whole mixture.

Combine and chill

Transfer the passion fruit syrup (strained or unstrained) to a pitcher. Add 2 cups cold water and 2 tablespoons fresh lime juice. Stir thoroughly to combine. Taste and adjust: add more water if too strong, more lime if you want more brightness, or more sugar if not sweet enough.

Add mint and chill

If using mint, bruise the leaves lightly between your palms to release oils and add to the pitcher. Refrigerate the sharbat for at least 30 minutes to let flavors meld. For immediate serving, proceed to the next step but the flavor will be brighter after chilling.

Serve

Fill glasses with ice cubes. Stir the sharbat in the pitcher once more, then pour into glasses. Garnish each glass with a lime slice and a mint sprig if desired. If you strained seeds earlier and want a bit of texture, spoon a teaspoon of reserved pulp (without seeds) into each glass before pouring.

To make a sparkling passion fruit sharbat, substitute chilled sparkling water for half or all of the cold water and add it just before serving to preserve fizz. For a richer version, replace up to 1/2 cup of cold water with chilled orange juice or coconut water. Adjust sugar depending on the sweetness of your fruit.
