Prepare demerara syrup

Combine demerara sugar and water in a small saucepan (2 parts sugar to 1 part water). Warm over medium-low heat, stirring until sugar dissolves completely. Do not boil. Remove from heat and cool to room temperature. Transfer to a sealed container and refrigerate until needed. Yields syrup for several cocktails.

Add ingredients to mixing glass

In a mixing glass or stirring glass, add 2 oz rye whiskey, 0.5 oz demerara syrup (or simple syrup), 3 dashes Angostura bitters and 2 dashes orange bitters.

Stir with ice

Fill the mixing glass with ice and stir gently but thoroughly for about 20–30 seconds (or about 15–20 revolutions) until the mixture is well chilled and slightly diluted (a slight frost on the glass).

Strain and serve

Place a large ice cube in an old-fashioned (rocks) glass. Strain the chilled cocktail over the large ice cube.

Express and garnish

Take the orange peel and firmly express the oils over the glass by holding it skin-side down and giving it a sharp squeeze so the oils spray onto the surface of the drink. Optionally rub the peel around the rim of the glass, then drop the peel into the drink as garnish.

Serve immediately. Sip slowly to appreciate the balance of spice, sugar, and citrus in this classic peg-sized Old-Fashioned.
