Mutton Marinade
Clean & Marinate
Trim excess fat from the mutton and wash under cold running water. Pat dry with paper towels. In a large bowl combine yogurt, turmeric, salt, ginger paste and garlic paste. Add the mutton and rub the marinade thoroughly over each piece. Cover and refrigerate for at least 2 hours, preferably 4–6 hours or overnight for best flavor penetration.
Dry Spice Mix (to be freshly crushed)
Roast & Grind Spices
Heat a small dry skillet over medium heat. Add black peppercorns, coriander seeds and fennel seeds. Dry roast for 2–3 minutes until fragrant, stirring constantly to avoid burning. Remove from heat and cool for 5 minutes. Crush coarsely using a mortar and pestle or spice grinder; you want a coarse, slightly chunky grind rather than a fine powder. Set aside.

Prepare Aromatics
Peel and thinly slice the shallots or small red onions. Slit the green chilies lengthwise. If using curry leaves, rinse and pat dry. If using fresh ginger for garnish, julienne and keep aside. Chop tomato finely if using.
Cooking & Finishing
Brown the Marinated Mutton
Heat 3 tablespoons of oil in a heavy-bottomed pan or kadai over medium-high heat. Remove excess marinade (reserve the yogurt-spiked juices) and add mutton pieces in a single layer (work in batches if necessary). Sear and brown the mutton on all sides for 6–8 minutes; this helps develop flavor. Transfer browned pieces to a plate.
Temper & Sauté
In the same pan, add the remaining 3 tablespoons oil and reduce heat to medium. Add mustard seeds and let them pop (~30 seconds). Add cumin seeds, cinnamon stick, cardamom pods and cloves; sauté 30–45 seconds until aromatic. Add the sliced shallots and a pinch of salt; cook, stirring frequently, until they turn golden brown and start to caramelize (6–8 minutes). Add slit green chilies and curry leaves, sauté 1 minute.
Combine & Cook
Add the optional chopped tomato and cook until it breaks down and oil separates slightly (3–4 minutes). Return the browned mutton to the pan along with any juices reserved from marinating. Stir to combine. Add the coarsely crushed spice mix and freshly ground black pepper (start with 1 tsp from the finishing pepper). Mix well so the spices coat the mutton. If the pan looks dry and meat is sticking, add 60–120 ml (1/4–1/2 cup) hot water — just enough to create steam and help cook; do not make a gravy. Cover and reduce heat to low. Cook for 30–40 minutes, stirring occasionally and checking moisture; add small splashes of hot water if it becomes too dry. Mutton should be fork-tender when done.
Reduce & Crisp
Once the mutton is tender and the liquid has mostly evaporated, increase heat to medium-high and stir-fry for 4–6 minutes to crisp the edges and deepen color. Taste and adjust salt. Add the remaining 1 tsp freshly ground black pepper (or more to taste) and lemon juice, tossing well to combine.
Garnish & Serve
Turn off heat. Sprinkle chopped fresh coriander and julienned ginger on top if using. Serve hot as a dry, peppery side dish with plain rice, appam, dosa, or roti.
