Prepare Glass
Chill a copper mule mug (or highball glass) by filling it with ice and letting it sit while you assemble the ingredients. Discard the ice before building the drink, leaving the mug cold.
Combine Spirits and Citrus
In a cocktail shaker filled with ice, add 2 oz vodka, 0.5 oz fresh lime juice, 0.5 oz St. Germain, 0.25 oz simple syrup, and 2 dashes Angostura bitters. Cap the shaker.
Shake
Shake vigorously for about 8–10 seconds until the shaker is well chilled (you want a brisk chill but not too much dilution).
Build the Drink
Discard the chilling ice from the mug and fill the mug with crushed ice (about 1 cup). Strain the shaken mixture over the crushed ice. Top with 4 oz chilled ginger beer and gently stir once or twice to integrate, preserving the ginger beer's carbonation.
Garnish & Finish
Garnish with a lime wheel on the rim, a piece of candied ginger or a thin fresh ginger slice perched on top of the ice, and an optional mint sprig slapped between your palms and tucked beside the ginger for aroma. Serve immediately with a straw.
