Prepare beans

Drain and rinse the canned beans thoroughly. Set aside 2 cups. If you prefer a thicker texture, reserve 1/4 cup of the bean liquid before rinsing and add it later.

In a medium saucepan over medium heat, combine the tomato puree (1 cup) and vegetable broth (1 cup). Bring to a gentle simmer, then reduce heat to low while you prepare the aromatics.

Aromatics & Vegetables

Heat 2 tbs oil in a large skillet or sauté pan over medium heat until shimmering.

Add the finely chopped onion (1 cup) and a pinch of salt. Cook, stirring occasionally, until the onion is soft and beginning to brown, about 6–8 minutes.

Add the minced garlic (3 cloves) and minced ginger (1 tbs). Sauté for 30–45 seconds until fragrant—do not let them burn.

If using, add the diced green bell pepper (1/2 cup) and chopped fresh tomato (1/2 cup). Cook for 3–4 minutes until softened and the tomato releases some juices.

Spoon about 1/4 cup of the warm tomato–broth mixture into the skillet to deglaze and incorporate flavors.

Spices & Seasoning (Masala)

Reduce heat to medium-low. Add ground cumin (1 tsp), ground coriander (1 tsp), ground turmeric (1/2 tsp), garam masala (1 tsp), red chili powder (1/4 tsp), and ground black pepper (1/4 tsp) to the skillet. Stir continuously for 30–60 seconds to bloom the spices in the oil and aromatics.

Add the drained beans (2 cups) to the skillet and gently stir to coat them with the spiced onion–tomato mixture. Cook for 2–3 minutes to let the beans warm and absorb flavors.

Pour the remaining tomato–broth mixture (from the saucepan) into the skillet. Stir to combine and bring to a gentle simmer. Simmer uncovered for 8–10 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld. If you prefer a saucier dish, simmer less; for thicker, simmer longer or mash a few beans against the side of the pan to thicken.

Taste and adjust salt if needed (start with the 1 tsp salt listed).

Turn off the heat. Stir in lemon or lime juice (1 tbs) and brown sugar or honey (1/2 tsp) if using. Add the optional ghee or butter (1 tsp) for extra richness and stir until melted.

Fold in chopped cilantro (2 tbs). Let the beans rest 2 minutes so flavors settle.

Serve warm. Masala Beans are excellent over steamed rice, with naan, or as part of a grain bowl. Garnish with additional cilantro or a squeeze of lemon if desired.
