Kala Khatta Syrup
Prepare fruit
Rinse the black grapes (or plums) under cold water. Remove stems and roughly chop the fruit so it releases juices evenly while cooking.
Cook down fruit
Place the chopped fruit and 1 cup water into a medium saucepan. Bring to a simmer over medium heat, then reduce to low and simmer gently for 12–15 minutes, stirring occasionally, until the fruit is very soft and has released its juices.
Sweeten and spice
Stir in the grated jaggery and brown sugar. Continue to simmer for another 4–6 minutes, stirring so the sugars dissolve and the mixture thickens slightly.
Blend and strain
Remove the pan from heat and let cool for 5 minutes. Transfer the fruit mixture to a blender and blend until smooth. Strain the blended puree through a fine-mesh sieve into a bowl, pressing with a spoon to extract as much liquid as possible. Discard solids (or reserve for another use).
Finish syrup
Stir in the lemon juice, black salt, and roasted cumin powder into the strained syrup. Taste and adjust: add more lemon if you want brighter acidity, or more jaggery/brown sugar for sweetness. Let syrup cool to room temperature; then chill in the refrigerator for at least 30 minutes so flavors meld.
Nice Cream (Dairy-free Frozen Banana Base)
Freeze bananas
If not already frozen, slice very ripe bananas and freeze for at least 4 hours or until solid. Work with frozen bananas straight from the freezer.
Blend bananas
Place frozen banana slices into a high-speed blender or food processor. Pulse to break them up, then blend continuously. Stop and scrape down the sides as needed. The bananas will go from crumbly to creamy — this can take 2–5 minutes depending on your machine.
Add creaminess & sweetener
When the banana reaches a smooth soft-serve texture, add the chilled coconut milk, vanilla extract, pinch of salt, and maple syrup (if using). Blend briefly to combine until silky. Taste and adjust sweetness or coconut milk for desired consistency.
Optional firming
If the mixture is too soft to scoop, transfer to a container and freeze 20–30 minutes until scoopable. For a softer texture, serve immediately.
Assemble & Serve
If you prefer a slushy drink-style treat, place a few tablespoons of crushed ice or 1/2 cup crushed ice into serving glasses. If serving as scoops, skip the crushed ice.
Generously drizzle 1½–2 tbs of the chilled Kala Khatta syrup over each serving. Swirl it gently into the nice cream so you get streaks of dark tangy flavor.
Garnish with chopped pistachios or roasted peanuts and a small pinch of extra black salt if desired. Add a lemon wedge on the side for squeezing over the top.
Serve immediately. Leftover Kala Khatta syrup will keep refrigerated in an airtight container for up to 7 days; nice cream can be stored in the freezer but may need 10–15 minutes at room temperature to soften before scooping.
