Prepare Simple Syrup (if not using ready-made)
Make syrup
Combine 1/4 cup water and 1/4 cup granulated sugar in a small saucepan. Heat over medium, stirring until the sugar dissolves completely. Remove from heat and cool to room temperature. This yields about 1/4 cup syrup; refrigerate any excess.
Assemble Fresh Nimbu Soda
Muddle mint and syrup
In a sturdy glass or cocktail shaker, place the mint leaves and 2 tablespoons of the prepared simple syrup. Gently muddle the mint with the back of a spoon or a muddler for about 10–15 seconds — press enough to release the mint oils but not shred the leaves.
Add lime juice and seasonings
Pour in 1/4 cup fresh lime (nimbu) juice. Add 1/4 teaspoon black salt and 1/8 teaspoon roasted cumin powder. Stir or gently shake to dissolve and combine the seasonings with the lime-mint mixture.
Combine with soda
Fill two serving glasses with ice cubes (divide 1 cup ice between them). Strain the lime-mint mixture evenly into the glasses (or pour from the shaker). Top each glass with the cold carbonated water (divide 3 cups between the two glasses). Stir gently once to combine without flattening the soda.
Garnish and adjust
Taste one glass and adjust sweetness or salt if needed: add up to 1 teaspoon simple syrup more for sweetness, or a pinch more black salt for tang. Garnish each glass with a lime wheel or wedge and a sprig of mint. Serve immediately while fizzy.
