Rinse and bruise mint
Rinse 1 cup fresh mint leaves in cold water to remove dirt and grit. Gently shake off excess water and lightly bruise the leaves by rolling them between your palms or crushing them lightly with your fingers to release essential oils.
Brew Tea
Steep mint
Remove the pot from heat. Add the rinsed and bruised mint leaves to the hot water. Cover the pot and let the mint steep for 8–12 minutes depending on desired strength (8 minutes for a light cup, 12 minutes for strong).
Finish with lemon (optional)
If using lemon, add 1 tablespoon fresh lemon juice to the pot and/or drop in 1–2 fresh lemon slices. Stir gently.
Serve and Store
Strain the tea through a fine-mesh strainer into a heatproof pitcher or directly into cups, discarding the spent mint leaves. Serve hot in teacups, garnished with a fresh mint sprig or a lemon slice if desired. To make iced mint tea, allow the brewed tea to cool to room temperature, then refrigerate until cold and serve over ice.
Store any leftover tea in a covered container in the refrigerator for up to 3 days. Reheat gently on the stove for a warm cup, or serve chilled.
