Prepare and toast bread

Preheat a grill pan or toaster. Brush both sides of the bread slices lightly with 1 tbs softened butter or a light coating of olive oil. Toast until golden and crisp, about 2–3 minutes per side on a grill pan or 3–5 minutes in a toaster, until edges are crunchy but center still slightly yielding. Season lightly with 1/4 tsp salt and 1/8 tsp black pepper. Keep warm on a plate while you make the beans and eggs.

Sauté aromatics

Heat 1 tsp olive oil in a small nonstick or stainless steel skillet over medium heat. Add 1/4 cup finely chopped yellow onion and a pinch of salt. Sauté until the onion is translucent and beginning to brown at the edges, about 4–5 minutes. Add 1 minced garlic clove and cook another 30 seconds until fragrant.

Build the sauce

Stir in 1/2 tsp tomato paste and cook 30 seconds to deepen flavor. Add 1 cup canned baked beans (including sauce) to the skillet. Then add 1/2 tsp Worcestershire sauce, 1/2 tsp brown sugar (or honey), 1/4 tsp smoked paprika, 1/2 tsp lemon juice, 1/4 tsp salt and 1/8 tsp black pepper. Reduce heat to low–medium.

Simmer and adjust seasoning

Let the beans simmer gently, stirring occasionally, until warmed through and slightly thickened, about 5–7 minutes. If the mixture becomes too thick, add up to 1–2 tablespoons water. Taste and adjust for seasoning — add more salt, pepper, sugar or lemon as needed. Stir in 1 tbsp chopped fresh parsley if using, and keep warm over the lowest heat while you cook the eggs.

Cook eggs (fried, sunny-side or over-easy)

In a separate small nonstick skillet, heat 1 tsp butter or olive oil over medium-low. Crack 2 large eggs into the pan, spacing them apart. Season with 1/8 tsp salt and a pinch (1/16–1/8 tsp) black pepper. For sunny-side up: cook gently until whites are set and edges lightly lacy, 3–4 minutes; cover with a lid for 30–60 seconds to set the tops if desired. For over-easy: when whites are set, carefully flip and cook 15–30 seconds more. Remove from heat.

Or scramble (alternative)

Whisk eggs briefly with a pinch of salt. Heat 1 tsp butter in the skillet until foamy, pour eggs in, let set slightly, then gently fold until soft curds form, 1–2 minutes. Remove immediately to avoid overcooking. Finish with chopped chives or parsley if desired.

Divide the toasted bread between two plates. Spoon the warm beans evenly over the toast, using about half a cup per slice (roughly 1/2 cup per slice). Top each toast with one cooked egg. Drizzle a little extra virgin olive oil (about 1/2 tsp total) over the eggs if you like and sprinkle red pepper flakes (1/4 tsp) for heat, plus extra chopped parsley or chives.

Serve immediately while toast is crisp, eggs are hot, and beans are warm. Provide salt and pepper at the table for final adjustments.
