Salt rim
Pour the salt (or mix of salt and smoked salt/chaat masala if using) onto a small plate. Run a lime wedge around the rim of a rocks or coupe glass to moisten, then dip the rim into the salt to coat evenly. Set the glass aside in the freezer for a few minutes to chill, if desired.
Juice citrus
Juice fresh limes and a lemon. Strain the juices through a fine mesh sieve into a small measuring cup to remove pulp and seeds. Measure 1 oz lime juice and 1/2 oz lemon juice for one serving.
Cocktail Build & Serve
Add tequila blanco (2 oz), Cointreau (1 oz), fresh lime juice (1 oz), fresh lemon juice (1/2 oz), simple syrup (1/2 oz) and 2 dashes orange bitters into a cocktail shaker.
Fill the shaker with ice (enough to nearly fill). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and a light frost forms.
Fill the prepared glass with fresh ice if you prefer it on the rocks (or leave chilled and dry for a coupe presentation). Double-strain the cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove any small ice shards and citrus pulp.
Garnish with a lime wheel or wedge on the rim, and optionally a thin slice of kaffir lime or dehydrated orange. If you used chaat masala, lightly dust a tiny pinch atop the drink for an aromatic hint.
Serve immediately.
