Preheat oven to 375°F (190°C). Lightly butter or spray a 9-inch (23 cm) pie dish or 8x8-inch baking dish.

If using frozen berries, do not thaw completely; just let sit at room temperature 10–15 minutes so juices loosen slightly. Place mixed berries and diced apples in a large bowl.

Add granulated sugar, brown sugar, cornstarch, lime juice, vanilla extract, shredded coconut and a pinch of salt to the fruit. Toss gently until fruit is evenly coated and the cornstarch is dissolved. Let rest 5 minutes to allow juices to mingle.

Transfer fruit mixture to prepared baking dish, spreading into an even layer and scraping any accumulated syrup from the bowl into the dish.

Coconutty crumble topping

In a medium bowl combine flour, rolled oats, shredded coconut, brown sugar, granulated sugar, ground cinnamon and salt. Whisk briefly to distribute ingredients evenly.

Add the cold cubed butter and the optional coconut oil. Using a pastry cutter, two forks, or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. This will give a mix of crisp and crumbly texture when baked.

Taste a small pinch of the raw crumble: it should be slightly sweet and coconut-forward; adjust by adding a tablespoon more sugar if you prefer sweeter topping.

Evenly sprinkle the crumble mixture over the prepared fruit, covering the fruit but leaving a little breathing room at the edges for bubbling. Gently press down in places so larger clumps form—these bake into crunchy clusters.

Baking and finishing

Place the assembled crumble in the preheated oven on the middle rack. Bake 30–35 minutes until topping is golden brown and fruit filling is bubbling at the edges. If topping browns too quickly, tent loosely with foil after 20 minutes.

Remove from oven and let cool on a wire rack 10–15 minutes to thicken the filling slightly; this makes serving cleaner and improves texture.

While still warm, sprinkle toasted shredded coconut over the top for extra crunch and coconut aroma.
