Chickpeas & Cooking

Soak chickpeas

Rinse 2 cups dried chickpeas thoroughly. Place in a large bowl, add enough cold water to cover by at least 2 inches (about 6–8 cups), stir in 1/2 tsp baking soda, and soak 8–12 hours or overnight. The baking soda helps soften skins and speeds cooking.

Drain and rinse

After soaking, drain and rinse chickpeas well under cold water.

Cook chickpeas (stovetop or pressure cooker)

Stovetop: Add drained chickpeas to a large pot with 8–10 cups fresh water and 1 tsp salt. Bring to a boil, skim foam, reduce to a simmer, and cook 60–90 minutes until tender but not falling apart. Pressure cooker/Instant Pot: Add chickpeas and 6 cups water, 1 tsp salt. Pressure cook on high for 25–30 minutes (or manual high for 18–20 minutes in a stove-top pressure cooker). Natural release 10 minutes. Reserve cooking liquid—about 2–3 cups—and drain excess if needed. The cooking liquid will be used to adjust gravy thickness.

Chole Masala Base

Prepare spices and aromatics

Heat 4 tbs oil or ghee in a heavy-bottomed pot over medium heat. Add 1 tsp cumin seeds and let them sizzle ~10 seconds. Add bay leaf, cinnamon stick, 3 cardamom pods and 3 cloves and sauté 20–30 seconds until fragrant.

Add 1 medium finely chopped onion and cook, stirring, until golden brown — about 8–10 minutes. If the onions brown too quickly reduce heat. Properly caramelized onion builds depth.

Stir in 1 tbs ginger paste and 1 tbs garlic paste; cook 1–2 minutes until raw smell disappears.

Add 2 cups tomato puree or finely chopped tomatoes. Cook on medium heat until the tomato loses rawness and oil begins to separate—about 8–10 minutes.

Lower heat and add spices: 2 tsp ground coriander, 1.5 tsp ground cumin, 1/2 tsp turmeric, 1 tsp red chili powder, 1/2 tsp kashmiri chili (if using), and 1.5 tbs chole masala (or 2 tsp homemade). Stir and cook for 2–3 minutes to bloom the spices.

Combine & Simmer

Add the cooked chickpeas to the spiced tomato-onion mixture. Add about 1 to 2 cups of reserved chickpea cooking liquid to reach your preferred consistency (start with 1 cup). Stir to combine.

Bring to a gentle simmer, cover partially, and cook 15–20 minutes so flavors meld and gravy thickens. Stir occasionally and mash a few chickpeas with the back of a spoon to slightly thicken the sauce.

Season with remaining 1 tsp salt (adjust to taste) and 1 tbs amchur powder or 1 tbs lemon juice. Taste and adjust spices—add more chole masala, salt, or chili if desired.

Stir in 1 tsp garam masala and 1 tbs butter or ghee (optional) and simmer 1–2 minutes.

Finish & Serve

If using green chili, add the slit green chili now and simmer 1 minute for a fresh heat.

Turn off heat and garnish with 1/4 cup chopped cilantro. Serve hot with lemon wedges on the side.

Serve suggestions: pair with steamed basmati rice, bhatura, puri, or roti. Offer sliced raw onion and extra lemon wedges.
