Method
Chickpeas & Soaking
Soak chickpeas
Rinse 2 cups dried chickpeas under cold water until water runs clear. Put them in a large bowl, add 8 cups fresh water and 1/2 tsp baking soda, stir, and soak overnight or for at least 8 hours until they double in size.
Boil/pressure-cook chickpeas
Drain soaked chickpeas and rinse. Place in a pressure cooker or pot with 4–5 cups fresh water. Pressure-cook on medium-high for 15–20 minutes after first whistle (or simmer in a covered pot for 45–60 minutes) until tender but holding shape. Reserve the cooking liquid (about 1–2 cups) for adjusting gravy consistency; drain chickpeas into a bowl and set aside.
Masala (onion-tomato base)
Stir in 1 cup tomato puree and 1 sliced green chili (optional). Cook the mixture, stirring occasionally, until oil separates from the masala, about 8–10 minutes. This ensures a well-cooked tomato base.
Spices & Seasoning
Lower heat slightly and add 1.5 tsp salt, 1/2 tsp turmeric, 1/2 tsp red chili powder, 2 tsp coriander powder, and 1 tsp cumin powder. Cook for 2–3 minutes, stirring so the spices roast but do not burn.
Add the cooked chickpeas to the pan and stir to coat them in the masala. Pour in 1 to 1.5 cups of the reserved chickpea cooking liquid (or water) to create a gravy. Bring to a gentle simmer and cook uncovered for 10–15 minutes so flavors meld and gravy thickens. Mash a few chickpeas lightly with the back of a spoon to slightly thicken the sauce.
Stir in 1 tbs amchur (or 1 tbs lemon juice) and 1/2 tsp garam masala. Taste and adjust salt, spice, or tang. If gravy is too thin, simmer a few more minutes; if too thick, add up to 1/2 cup water.
Garam Chole Tempering (Tadka) & Garnish
In a small skillet, heat 1 tbs ghee or oil over medium heat. Add 1/2 tsp ajwain or a pinch of crushed kasuri methi and let it sizzle for 5–10 seconds. Immediately pour this tempering over the simmering chole to bloom the flavors.
Stir gently, then sprinkle 2 tbs chopped coriander leaves and 1 tbs julienned ginger on top. Optionally dust with 1/2 tsp chaat masala for extra tang. Cover for 2 minutes before serving to let aromas marry.
