Method
Prep
Seed the pomegranate if using fresh, measure out the puffed rice, sev and roasted peanuts.
If your tamarind chutney is very thick or overly sweet, taste and adjust by mixing with 1 teaspoon water or the optional sugar to balance tartness. Keep chutneys ready at room temperature.
Assemble Bhel
Combine dry base
In a large mixing bowl, gently break up any large clumps of puffed rice. Add the 1 cup sev (reserve extra for garnish) and roasted peanuts. Toss gently so components are evenly distributed.
Add fresh produce
Add the diced tomatoes, chopped red onion, pomegranate arils, chopped cilantro, chopped mint and finely chopped green chili to the bowl with the puffed rice mixture. Mix gently with a large spoon or your hands so the ingredients are evenly incorporated without crushing the puffed rice.
Season and dress
Drizzle the tamarind chutney (3 tbs), green chutney (2 tbs) and fresh lime juice (2 tbs) over the mixture in separate streams so flavor distributes. Sprinkle chaat masala (1 tsp), black salt (1/2 tsp), red chili powder (1/4 tsp) and the optional 1/2 tsp sugar over the top. Using a light folding motion, toss everything together so the chutneys coat but the puffed rice remains mostly crisp. Taste and adjust seasoning — add a little extra lime or chutney if needed.
Do a final check for texture and salt: if mixture seems soggy, add up to 1/2 cup additional puffed rice or extra sev to restore crunch. If too dry, add 1 teaspoon more tamarind chutney or 1/2 teaspoon lime juice and toss.
Serve
Immediately transfer bhel to individual bowls or a serving platter to keep it crisp. Sprinkle the reserved 1/4 cup sev over each portion as a garnish and scatter a few extra pomegranate arils and cilantro leaves on top.
Serve with lime wedges and extra chutneys on the side so diners can adjust spice, tang and sweetness. Bhel is best eaten right away — within 10–15 minutes of assembly — to enjoy the crunchy texture.
