Combine spices and water

In a small saucepan, combine 1 cup water, sliced ginger, crushed cardamom pods, cloves, crushed peppercorns and the cinnamon stick. Bring to a gentle simmer over medium heat.

Simmer spices

Reduce heat to low and simmer the spiced water for 5 minutes to extract aromatics. Keep the pot partially covered to retain steam.

Add tea leaves

Add the black tea leaves (or tea bags) to the spiced water, stir, and steep on very low heat for 2–3 minutes until the decoction is strong but not bitter.

Chocolate & Sweetening

Add milk and chocolate

Pour in 1 cup whole milk and raise heat to medium-low. Add the finely chopped dark chocolate and unsweetened cocoa powder, whisking constantly until the chocolate is fully melted and the mixture is smooth (about 2–3 minutes).

Sweeten and balance

Stir in the brown sugar and, if using, the maple syrup or honey. Taste and adjust sweetness. Continue to warm the chai until it is hot but not boiling, about 1–2 minutes. Avoid boiling to keep milk from scalding.

Finishing & Garnish

Strain and finish

Remove the saucepan from heat. Strain the chai through a fine-mesh sieve into a heatproof jug or directly into mugs to remove tea leaves and whole spices. Stir in 1/4 tsp vanilla extract and a pinch of sea salt to brighten flavors.

Serve

Ladle the Naughty Chocolate Chai into two cups (about 1 cup each). Top each cup with a tablespoon of whipped cream if desired and sprinkle with grated chocolate or cacao nibs. Serve immediately.
