Prepare the infusion

In a large jar, combine the neutral grain spirit, dried cocoa nibs, chopped fresh pear, juniper berries, and peppercorns. Seal the jar tightly.

Infuse the spirit

Let the mixture infuse in a cool, dark place for 5 to 7 days, shaking the jar gently every day.

Strain the infusion

After 5 to 7 days, strain the mixture through a fine mesh sieve or cheesecloth into a clean bottle, discarding the solids.

Prepare the infusion

In a saucepan, combine white grape juice, dried herbs, chopped fresh pear, and cinnamon stick.

Simmer the mixture

Heat the mixture over medium heat until it just begins to simmer, then remove from heat and let it steep for 30 minutes.

Strain the infusion

After steeping, strain the mixture through a fine mesh sieve into a clean bottle, discarding the solids. Allow it to cool completely.

Mix the ingredients

In a mixing glass, combine the infused gin, infused vermouth, and non-alcoholic bitter aperitif.

Fill a rocks glass with ice cubes.

Strain the mixed ingredients over the ice in the rocks glass.

Garnish with an orange slice and enjoy your Sober Negroni!
